I've tried making tripa, and it never comes out very good. I've boiled it, cooked it in butter, grilled it, even done it in a disco, but it's never come out very good.
Let me know if you know a good way. |

| i'm not too sure about tripa either, but i think that to start of you are supposed to boil it, then you fry it in a pan. I tried it once, it was ok but a but too chewy, i think i over boiled it. not sure though |

I tried again this past weekend, and I discovered a way that comes out really well.
Boil the tripa(leave it in the braid it comes in)
Drain the water
stick a stick of butter in the pot and let the tripa fry(still in the braid)
Once browned, grill the tripa over a low flame, browning even more
Then cut slices off the braid, so that 1" pieces remain.
Then fry the pieces in the pot or a pan with only the butter or grease that the pieces already have.
Fry to the crispiness you desire.
Next day, go get your cholesterol level checked. |
