Does anyone know of a good marinade for pollo al disco?

I've tried it many ways, but what I've liked best is: Oyster Sauce, Chile Amor, garlic powder, salt and pepper. I like to marinate it over night, but 3 or 4 hours is enough. When the chicken is done, the skin gets a really dark red, toasted texture that is delicious. I always do it in vegetable oil, but a couple months ago I tried manteca, and it was too heavy. I think it's best with vegetable oil. What works for you?

I've heard of people using mustard. Has anyone tried that? Is it good?

I've prepared pollo al disco with just some salt, pepper, garlic, and some sliced ginger. Very simple but very tasty
