I personally prefer to use mesquite (available at Sol Market) in a charcoal grill.

It's all about Mesquite.

Ok Calecia listen to the fastest way to light up Mesquite with No fluids or gasoline that can and will ruin the taste of your food.

1. Take off top grill.
2. Crumble newspaper into medium size balls.
3. Fill grill with newspaper all the way to the top.
4. Replace grill.
5. Stack Mesquite in pyramid fashion.
6. Light newspaper with a match.
7. Come back in 5 to ten minutes.
8. With long fork or screwdriver turn grill so mesquite can fall into grill.
9. Replace grill.
10. Clean grill with an onion.

This trick can also be used to start a bonfire.
