I tend to eat a lot of chicken breast at home. It's good for you, as in it's better than red meat, lean, high in protein and tasty. So when I want to quickly make a chicken breast dish, I only have a few options since I haven't explored much with other ingredients. Usually I add some lemon herb spicing, BBQ or some sort of marinade and then throw it on the pan that's been quickly sprayed with Pam.
After a while, this gets real boring, so I find myself stressing out over some new additions. So I look up on online recipe sites for chicken recipes, but find that most require like 4 or 5 and sometimes more ingredients to make the plate. I'm not really ready for that just yet.
So does anyone have any quick recipes for chicken (breast) to make at home real quick? If they're healthy, even better. |

I've experimented with a bunch of stuff, but one that I like is one where I made a mixture of chipotle marinade, vinegar, tequila, and vietnamese sauce (you know, that really hot red one with the pepper seeds still in it). I perforated the breast with a fork, threw it in the concoction, left it there for 4 hours, and cooked it. Best served with white rice.
If you really don't feel like mixing all that together, then I recommend getting those canned Herdez chipotles and putting them in a blender with boiling hot water. Make sure you have a thick, paste like consistency after you're done. Put this in a frying pan under a light flame. After about a minute or so, stick the chicken breast in there, and let it cook. I personally like eating this one with a green salad (those pre-packaged ones if you don't feel like making one), some mixed veggies, and some wheat bread with light butter. Best with a glass of wine or a Hefeweizen.

| When I cook chicken it's always on the grill. The simplest good tasting marinade I can think of is your favorite beer, lemon, soy sauce, and Tapatio. |

Here are some of my favorite for chicken breast:
Soak it in plain yogurt with mint; grill it in a pan, salt and pepper, serve it on rice.
With rosemary, thyme, herbes de provence or some other aromatic herb.
With pasta and lots of garlic.
We also like it curried; it's not so hard to make. In a pot - curry paste, coconut milk, fish sauce, and some brown sugar; let it all disolve. Then the chicken breast in cubes, and some frozen veggies when the meat is almost done (a stir-fry type usually works with the water chestnuts and bamboo shoots). The curry paste jar will usually have the exact recipe and ingredient amounts.
Carnicero's chipotle recipe looks pretty good, I might try that. |

Oven-375-one hour
Marinate chicken two hours beforehand-
Lemon Juice/Olive Oil/Oregano- Kosher Salt-Ground Pepper
Slice it up and place over bed of romaine/green lettuce with red onion, greek olives, feta cheese,slice tomato, lemon juice and extra virgin olive oil. |
